The Coffee

Papua New Guinea’s highland farms produce Arabica on volcanic soil above 1,600 meters — the same altitude and terroir that define serious coffee anywhere in the world. Freeze-dried, not spray-dried. The distinction matters: one preserves the bean’s character, the other replaces it.

Dark cocoa depth, dried stone fruit, a walnut finish that carries. These mountains were worth crossing at first light. The cup should be worth it too.

This is not a compromise format. Freeze-drying preserves the oils and compounds that make the original coffee worth sourcing. Add hot water. That is the entire process.

Shenandoah to Papua New Guinea

Shenandoah National Park runs along the Blue Ridge Mountains of Virginia — the kind of landscape that rewards the early morning. Skyline Drive at first light, before anyone else is on the road. The park was established in 1935. The tradition of a morning cup before the day begins is older than that.

Papua New Guinea’s Eastern and Western Highlands are about as far from Virginia as it is possible to get. But the logic of the cup is the same — something worth drinking in a place worth being. The smallholder farming communities in these highlands have deep agricultural heritage and produce coffee that earns its place in the cylinder.

This is the coffee George brings on the RV. Hot water from the camp stove. The valley still below. The cup does not require explanation.

Why Freeze-Dried and Not Spray-Dried?

Freeze-drying removes water from brewed coffee at low temperature, preserving the volatile aromatic compounds and oils that carry flavor. Spray-drying uses high heat to evaporate water rapidly — that heat degrades the character of the original bean.

The result is a measurable difference in the cup. Freeze-dried instant coffee retains more of the original coffee’s sensory profile. That is why specialty-grade instant coffee uses freeze-drying. It is the format that respects the source.
