The Coffee

Ethiopia is where coffee began. The Sidama region in the southern highlands is among the oldest and most respected growing areas in the world — the kind of place that does not need to announce its credentials because the cup does it for you.

Yellowstone is sourced from farms at 1,800 to 2,200 meters above sea level. At that altitude the beans develop slowly. The complexity that builds in those conditions is why Ethiopia Sidama commands the attention it does among people who take coffee seriously.

Roasted light in small batches in the United States. Shipped fresh. The structure of this coffee holds across brew methods — pour over, drip, French press, cold brew. It rewards the attention you give it.

Tasting Notes

Bergamot Citrus Bright, clean top note that opens the cup
Wild Blackberry Dark fruit depth through the mid-palate
Jasmine Finish Floral, long, clean close

Light Roast · Bright Acidity · Medium Body

Yellowstone to Ethiopia

Yellowstone became America’s first national park in 1872 — established not for commercial development, but because the land itself deserved to be preserved. Thomas Moran traveled to Yellowstone with the Hayden Geological Survey in 1871 and painted Excelsior Geyser, Yellowstone Park in 1873. Moran’s expedition work, alongside William Henry Jackson’s photographs from the same survey, helped Congress understand what was at stake when the Yellowstone National Park Protection Act was signed March 1, 1872.

Ethiopia’s Sidama region operates on a similar logic. These farms have been tended by the same communities for generations. The altitude, the varietals, the processing knowledge — it accumulates over time, and it shows in the cup. Both places were worth the attention it took to notice them.

The painting on this bag, Excelsior Geyser, Yellowstone Park, was completed by Thomas Moran in 1873. It is held by the Smithsonian American Art Museum, gift of Mrs. Armistead Peter III, and reproduced under the Smithsonian Open Access program (CC0). It is part of the historical record. So is this coffee.

What Makes This Specialty-Grade Coffee?

Specialty-grade coffee scores 80 points or higher on the Specialty Coffee Association’s 100-point evaluation scale. Coffees are evaluated through blind sensory testing by trained graders who assess aroma, flavor, body, acidity, and defects.

The classification represents a small percentage of global coffee production. Yellowstone meets the specialty-grade standard. It also meets the OFC Specialty Coffee Standard — specialty grade minimum, roasted in the United States, independently lab tested, shipped fresh.

Roasted in the United States

Coffee must be grown in equatorial climates, but roasting is the manufacturing step that transforms raw beans into the finished product. Yellowstone is roasted in the United States in small batches and shipped shortly after roasting.

Independent Laboratory Testing

Yellowstone is independently tested by FoodChain ID, a PJLA-accredited laboratory for contaminants including:

  • Mycotoxins
  • Heavy metals
  • Mold contamination
  • Yeast

Testing is conducted on the finished roasted coffee, verifying the purity of the product as it ships to you.
